1 RedCook Cinnamon Stick
2 RedCook Bay Leaves
1 tablespoon RedCook Garam Masala
1 teaspoon RedCook Turmeric Powder
1 teaspoon RedCook Red Chili Powder
1 teaspoon RedCook Coriander Powder
1 teaspoon salt (adjust to taste)
1 cup water
Fresh coriander leaves, chopped (for garnish)
Instructions:
Step 1: Marinate the Chicken
In a large bowl, combine the yogurt, RedCook Turmeric Powder, RedCook Red Chili Powder, RedCook Coriander Powder, and salt.
Add the chicken pieces and mix well to coat them evenly.
Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour (overnight for best results).
Step 2: Prepare the Curry Base
Heat oil in a large pan over medium heat.
Add the RedCook Cumin Seeds, RedCook Cardamom Pods, RedCook Cinnamon Stick, and RedCook Bay Leaves. Sauté until the spices release their aroma.
Add the chopped onions and cook until golden brown.
Stir in the ginger-garlic paste and sauté for another 2 minutes.
Add the pureed tomatoes and cook until the oil starts to separate from the mixture.
Step 3: Cook the Chicken
Add the marinated chicken to the pan, mixing well with the curry base.
Cook for 5-7 minutes, allowing the chicken to brown slightly.
Add RedCook Turmeric Powder, RedCook Red Chili Powder, RedCook Coriander Powder, and salt. Mix well.
Pour in 1 cup of water, stir, and bring the curry to a boil.
Reduce the heat to low, cover the pan, and let it simmer for 20-25 minutes, or until the chicken is fully cooked and tender.
Step 4: Finish and Serve
Stir in the RedCook Garam Masala and cook for an additional 5 minutes.
Garnish with fresh coriander leaves.
